Digestion of starch begins in the mouth with the secretion of amylase, which works best at the neutral pH of 7. The enzymes produced by the stomach work at an optimum ph of 1.5, which is very acidic. Once food enters the small intestine, the digestive environment changes, and the enzymes there work at their optimal efficiency at the neutral pH of 7.
